Belgian Style Quad

Selkirk Abbey's 10° quadruple, 2014 release, was made with authentic Belgian malt from the region's most respected maltster. This added touch of authenticity brings us closer to our goal of brewing the truest representation of the style. Rich malt and dark fruit notes combine with warming alcohol and leave with a soft longing finish. This beer is best when served in the company of friends.

Abbey Strong Dark

The 2015 release of our abbey strong dark is very exciting for us. Like its cousin the abbey style dubbel, the origins of the abbey dark strong are lost in the distant past. It is likely that a beer was brewed for the Lenten season that was richer and more nourishing than the table beers normally brewed by the monks of the middle ages. The prevailing theory is that such a beer is the predecessor of the modern abbey style dubbel and dark strong. Selkirk Abbey's 12° is our take on this modern classic. Eminently rich and inviting, 12° has resinous fruit notes, with deep toffee and caramel. The layers of seemingly endless malt yield ever so slightly to allow hints of Tabaco and leather in the finish.

Little things like the selection of the yeast and specialty grains were a source of great joy. BBL Aged Saint Augustine

Barrel Aged

9:30 on a weekday…and the power went out. Thank God we weren't brewing. Nothing to do now except maybe try the Rye Whiskey released earlier this morning from Dry Fly. "Wow, this is great. Let's do some boiler makers with our rye saison." A couple drunken hours later...the idea to barrel age Saint Augustine was born. We kept the aging to a minimum to preserve the integrity of the season but left it in just long enough to impart some Dry Fly deliciousness and smooth oak. This is our first barrel aged beer and rest assured it will not be the last, not by a long shot. We had been long considering which of our beers and whose barrels to use first, Dry Fly being the top contender for barrels from the start, when divine providence stepped in and helped us make the final decision.

Octavian

Imperial Quadruple

Octavian is a beer whose concept is lost in the haze of celebration and merriment. The logic, such as it was, was to make a double quadruple. The math leading inexorably to the only name worthy of such strength and nobility, not to mention numerical value: Octavian, the first Roman emperor. The recipe development was surprisingly easy. We would use too much of the best of everything that makes Belgian beers great, we are American after all. The only thing that eluded us was a style designation; a double quadruple makes no sense in brewing terms. The answer was hiding in plain sight. The beer's name held the answer.
